For anyone who works with or worships or have in the past both Helios and Apollo, what differences have you noticed between the 2, eg. How they teach, personality etc

I haven't worked with them too much. Hellenic stuff isn't really my cup of tea. But I can tell you that they are pretty different characters. With no disrespect, Helios is much more one-dimensional. He is really just the sun. If you want your face burned off or your plants need more photosynthesis, he is your man. Apollo is a much more complex and nuanced figure - a god of healing, spiritual illumination, artistic creation, and much more.

I don't agree that Helios is one-dimensional.

While he is the Sun, he is also the All-Seing Eye, the one called upon when swearing oaths and the one who punishes those who break them (he revealed Aphrodite's affair with Ares, and the kidnapping of Persephone by Hades).
He is father to Circe and Pasiphae, and grandfather to Medea and Asterion, so he is connected to wild magic.
He is the old protector of charioteers and horses.
With his daily run in the sky he keeps the cycle of the seasons, so he is also a keeper of the order of things.
